Dos Amigos Tacos is a brand new food truck based out of Covington, Washington. Co-owners Ernesto Ortega and Chef James McGraw are serving up tacos DAT way with fresh ingredients from local vendors.

At 23 years old, James is a self-taught chef who has worked in kitchens since he was 15. He went from working in a country club and a pizzeria to being the sous chef at a restaurant in Bellevue. With the knowledge and skills he developed there, and the help of 24 year old Ernesto, the two created Dos Amigos Tacos.

Although they’ve popped up in other locations, Dos Amigos Tacos has a steady residency once a week at the Red Dog Saloon in Maple Valley. You can find them in the parking lot every Wednesday from 12-9pm.

Since opening in October of 2018, their Beef Barbacoa has become the all-star of the menu. Chef McGraw describes it as, “A shredded beef taco with many layers. It is very sweet and tender but also sweet and crunchy from the pickled onions. Then, it’s a little spicy from our salsa roja.”

Dos Amigos Tacos Makes Mexican Food With Fresh Local Ingredients

When I asked the Dos Amigos what the hardest part of being young entrepreneurs was, James said; “The hardest part so far has been keeping the truck booked and business busy. It is really a challenge to create a following but we know once someone tries our food it will speak for itself.”
